
Why I Love This Chocolate Chip Banana Bread
The deep caramel flavor that the coconut sugar adds coupled with the chocolate chunks makes this a perfect snack. Change up the spices to change the flavor - try adding more (or less) of any of the spices for your taste. The rum brings extra spice to the banana bread but can be substituted for milk.
The second reason I love this recipe is that it's very versatile. You can easily change the spices, or add other spices - like vanilla extract or maybe even replace the bananas with pumpkin!

Freezing fruit is a great way to save bananas for later. You can toss them whole in the freezer and leave them out for 15 minutes to thaw and peel the banana. Alternatively, you can peel, chop, and place on a parchment-lined sheet pan and freeze. Once frozen, place it in a freezer bag - this way you can easily toss it into smoothies.

This Banana Bread Can Be Made Gluten Free Or Vegan
To make this banana bread gluten-free, replace the flour with almond flour or your favorite gluten-free flour.
If you'd like this bread vegan, replace the eggs with flax eggs. To replace 1 egg with a flax egg - mix 1 Tablespoon flaxseed with 3 Tablespoons of water and let sit for 15 minutes. Double the ingredients for this recipe to replace both eggs.
