Why I Love This Vanilla Vegan Bark


If you know me, you know I love sweets - this sweet vanilla vegan bark is no exception! With just 3 ingredients and optional toppings, I can make a treat I can feel good about eating.


A few weeks back I shared a chocolate version of this recipe - I love how the base is so customizable. While the chocolate version was nice, I think I prefer the vanilla version. Mainly due to the eye appeal of the bark. The vanilla color allows the colorful flowers on top to stand out.

Sweet Vanilla Vegan Bark Tips


This recipe is pretty simple with only 3 ingredients. I recommend using a 2-cup measuring cup as this will give you plenty of room for mixing the ingredients. In addition, this will save on the number of dishes you need to clean. A healthy dessert and fewer dishes? Sign me up!


 

If you don’t have plant collagen on hand, you can sub for powdered vanilla bean paste

 

My next tip is if you don't have plant collagen on hand. You can sub for powdered vanilla - I would just the amount to your taste. Powdered vanilla is sweeter to me than plant collagen. You can always add more vanilla, but once it's in, you can't remove it.
